Gaucamole Goals



Let’s get real – I LOVE guacamole.  I have tried for years to perfect my own recipe, but I have never had much luck.  I always thought that making gauc should be easy as pie – wrong.  The actual work is simple, however achieving that amazing flavor is not so easy!  It was never that I was making bad guacamole – I just never could make it so good that it was worth making at home instead of picking it up from Chipotle or another local Mexican restaurant.

Lucky for me, that all changed a few weeks ago when I had the pleasure of eating dinner at my grandparents house.  I went over there with the assumption that we were having homemade tacos, one of my Aunt Gen’s specialities, however my Grandmother threw a curve ball when she served up some homemade guacamole for an appetizer.  I took one bite and was hooked.

I have tried Ina Garten’s gauc, my other Aunt’s go-to recipe, and countless different recipes from restaurants all over and I have never had one as good as this! swear!!  Naturally, I took the recipe home with me and decided to attempt to make it myself, which usually never turns out as well…

Shockingly, it was even better than I had remembered when I made it myself!  Therefore, I am obligated to share this amazing recipe with all of my fellow gauc lovers.  Trust me, if I can make it taste this good, then so can you!




Rosa Mexicano Guacamole 

♦ Using a mortar and pestle, or the back of a wooden spoon and a bowl, mash the following ingredients into a juicy paste – using the salt as a grinder.

1 Tbsp chopped red onions

1/2 tsp chopped jalapeños

1/2 tsp chopped cilantro

1/2 tsp salt

♦ Add one avocado & fold into paste using a spoon.

I don’t mash up the avocado too much because I like my gauc chunky. 

♦ Mix the following ingredients in with a spoon and ENJOY!

2 Tbsp chopped red onions

1/2 tsp chopped jalapeños

1 tsp chopped cilantro

2 Tbsp chopped tomatoes (no juice or seeds)
